Summer is nearly over and true healthy eating begins anew for many people, with summer vacations, family reunions and gatherings we sometimes skimp on healthy eating and pursue our desires or whatever is available that we enjoy. To influence a positive attitude towards eating better here is a different take on a Cobb Salad.


Ingredients:
Serving size: 4

Lettuce ( I prefer Romaine or Boston )
1/3 cup of Sweet Tomatoes
2 boiled eggs
3 slices of bacon
1/2 of a apple
Smoked Cheese ( Gouda, Muenster, what ever you like)

Directions

In a pan boil 1 1/2 cup of water, it is better that the water is cold so that eggs can boil at the same temperature. Wash and clean the lettuce, a quick trick that I learned is to clean the lettuce in water, wrap the lettuce in two paper towels, place the lettuce wrapped in the paper towel in a plastic bag, tie the plastic bag and spin in the air. The lettuce will dry but please make sure there are not any holes within the bag or your kitchen will be soaking wet from the water on the lettuce.  Cut bacon into 3 strips each and place them in a skillet to cook, I prefer cutting the bacon before cooking since it cooks much faster and the bacon crisp a lot better. Slice and cut the apple and place on top of your cleaned and dried lettuce. Slice the sweet tomatoes in halves and place on top of the lettuce as well. Drain bacon and break up with your fingers to add to the lettuce. Place eggs on top and add cheese if you wish. Try a different Salad dressing don't stick with the same kind, that makes for boring salad and your bound to not stick with eating them on a regular basis.
